Wedding Cake Designers ... There are soooooo many Wedding Cake designers all over Australia, I have put together a few from VIC, NSW & WA for you to have a look at along with some important things to consider when planning the cake of your dreams. I will be listing for QLD, TAS, NT & SA soon. ... Phoebe Taste the Cake As you start setting up appointments, find out if tastings are available. This is an excellent opportunity to fully understand the range of each bakers abilities. Select a Style Deal with the cake after all decisions about dress style and reception decor have been made. These elements can serve as a blueprint for the design and structure of your wedding cake. Choose a cake that's compatible with the style of the venue, the season, your gown, the flower arrangements, or the menu. If you want colorful accents (such as sugar flowers or icing ribbons), give your baker fabric swatches. The cake should be part of the wedding, not a glaring sideshow. Get the Facts on Frosting Buttercream or fondant? That's the main question. Buttercream is often much more delicious. But if you love the smooth, almost surreal-like look of fondant as much as we do, consider frosting the cake in buttercream first and then adding a layer of fondant over the entire confection. Consider the Weather If you're having an outdoor wedding in a hot climate, stay away from whipped cream, meringue, and buttercream: They melt. Ask your baker about summer icing options; You might want to go for a fondant-covered cake -- it doesn't even need to be refrigerated. Mind Your Magazines Keep in mind that magazines have food stylists, editors, and assistants working nonstop to keep the cakes looking perfect. These people spend hours fixing the sweating, dripping, leaning, or sagging that can happen to a cake after it's been sitting for a while. And if what they do doesn't work, they can fix it with Photoshop. They also have the luxury of creating cakes from stuff that isn't edible -- most cakes in magazines are iced pieces of Styrofoam, which certainly doesn't taste very good. So don't expect your cake designer to be able to replicate exactly what you see in print.

Top Wedding Frustrations - RSVP'sSome of our “friends” like to let us know about their top wedding frustrations; the answers ranged from MIA wedding RSVPs, to people who show up the day uninvited to those who re-gift.
One thing we have noticed as a trend was; a lot of these things could probably be avoided ahead of time, with some carefully placed warnings and FYIs on your wedding invitation. So with that in mind I have compiled a set of four tips that should help you avoid hitting these problems with your guests as your special day approaches: 1. Give them addresses and contact info for EVERRRYTHING: Hotels, reception centers, churches, synagogues, airports, houses of the family: if it’s going to be important during your wedding celebration, make sure everyone knows how to get there and how to get in contact with the place as well. The more you can write your guests’ itineraries for them ahead of time, the less you’ll have to do it in the days leading up to your big day. 2. Make sure it’s clear to your guests what you need to know from them: If there’s one common complaint than any other we've heard, it’s the frustration in guessing the intentions and plans of guests who have refused to return their wedding RSVPs, online or paper. Make sure you clearly (but firmly) notify your guests when you need to hear their response by: make sure to give yourself plenty of time as well. 3. Registries, gifts – no one wants to be awkward: Gifts and registries are always uncomfortable topics, because who wants to get in a tiff with a friend or family member over a wedding present? With that in mind, some people will miss the boat without doubt, and wildcard givers can lead to some pretty awkward conversations after the ceremony. Make sure you communicate to your guests who you’ve registered with, and make sure to be polite, even if the gift is off the reservation. 4. Set the tone for your event with your communications: Fun or formal? Wild or reserved? The tone of your wedding day is entirely up to you (or, to you and the respective friends and family members helping you plan) so you should make sure your guests know what to expect ahead of time. By choosing the design and wording of your wedding RSVP and wedding invitation properly, you can help set the tone for your friends and family and get the day you want. No one wants to show up with the wrong approach in mind. Congratulations, you’re engaged! Now it’s time to...

Table Decorations on a Budget
Wondering how to keep the top tier of your wedding cake intact for a whole year? If you want to preserve the top wedding cake tier out of tradition then there are a few tips that can help you do it successfully. Many people like to do this out of tradition so on their first wedding anniversary they can celebrate with their wedding cake. However any cake that is in the freezer for a straight year is bound to be a bit stale. Different cakes flavors and or fillings can be worse then others. For instance, the more delicate the cake ingredients the the dryer the cake will tend to become in the freezer. Cakes that do well in the freezer: chocolate, hazelnut, almond, and carrot cake. Cakes that do not do so well in the freezer: white cake, cake with fresh fruit, and cakes with whipped cream fillings. Here are some useful tips on storing the top tier:
